  It' s friday, you might not know but it is very special day in Morocco to worship god at midday with  group prayer,  followed by couscous meal together with family. Of course everyone works, but some have 2 hours lunch break here in South, nice life down here.

  Couscous is symbol of spirituality, celebrating love and sharing, that' s why always served in one big plate made of teracota and everyone get to dig in :)

  The etticket to a one plate sharing meals,  is sticking to your front side and respecting your neighbor's, by trying to keep it mannered and clean. Never touch the meat, that is in the center of the plate untill the host start sharing it, by puting a peace for you at your side by the end of the meal.

  The opposit, means the person is an egoist and not a social mannered.

  There are many types of couscous, most famous is the one above on the photo called couscous royale, i will give you my recipe and i hope you will enjoy it, keep me posted ;)


Recipe

  2h and half hours cooking for the classical recipe . There is express grains   boiling method but we don't want that. Ours will be steamed with little bit of butter, giving it nice  smell, taste and texture.

  You need  the 2 parts pan for steaming          

   Down part will be for cooking the meat and the veggies, the upper part for steaming the couscous grains. Think of something to put in between to block the steam from escaping and directed way up, if you have questions, ask on comment.

  1 kilo Couscous grains, semolina called probably outside.
  1 kilo beef meat or other you appreciate
  Half tea cup  of oil
  2 chopped oignons
  Salt and pepper to adjust at the end
  3 big spoons of Rass El Hanout, wich is like the moroccan cury if not put only a mixture of Curcuma and dried ginger.
  Half kilos of the following veggies:
  - Carrots
  - Turnip
  - chopped fresh tomatos
  - Cabbage
  - Fresh grean Beans
  - Pampkin
  1 bunch coriander
  100 G chic peas
   2 liters of water
   1 table spoon of concentrated tomato

  In the bellow part  of the pan, you are going to put the oignons, oil, meat and spices, let all melt a bit then Add the shopped fresh tomatos, 10 minutes later add 2 liters of water, carrots, turnip and chic-peas , step a side to let it boil.

  Poor the couscous grains into the upper  part( the steamer) , weting the grains with warm water during  is very important operation, that helps there cooking process. Don' t forget to add some salt and butter one time and stear the grains as much as needed because they might stick to eachother.

 Your sauce now is boiling, so you can put the steamer on top of it, block the air coming out  in between, to direct it towards the grains.

 Let it cook for 45 minutes, than Add Pampkins, Cabbage, beans, coriander, and the concentrated tomato spoon to the rest of the veggies.

  wet the grains with some warm water, and get everything back to steaming position.

  20 minutes later check the cooking of your ingredients , repeat the weting grains operation as much as needed during all the process untill cooked.

 PS:
 you can choose any favorite veggie to use.

 the sauce should be little thick, homogenious and about a liter by the end of the cooking.

We drink whipped milk at the end to refresh

    Caftan is all kind of art expressions, each woman can  order a custom fit caftan for herself. We choose beautiful and quality fabric to take to a craftsman, we order the emproidery that he will hand make on the fabric to make the most unic dress.

    Big fashion designers are into new creations since few years, making Caftan or Takshita more and more elegant and known worldwide.     Basically, the narator is explaining the themes chosen by each creator to make there caftans and what type of fabric / hand work has been used.

   Minimum price to a Caftan is  400 Dollar in Morocco, it combines the fabric, embroidements quality and hand work price, if made from satin fabric  or created by famous designer the prices are far more higher than 400 Dollar.

Sardines fish tajine recipe

                               Sardine balls tajine with tomato sauce     



  Sardines are quite present at south Atlantic sea of Morocco .
  In my neighborhood in Agadir every morning around 10H a fisher man on motorbike comes around shouting ( sardines on and on), i open my door house and call him to check the quality,  fresh i would take immediately some straight to my kitchen.

  Here is what i do after  ☺

Ingredients:

For the sauce;

- 3 fresh tomatos
- 1 t.s concentrated tomato
-2 gloves garlic
- 1 oignon
- if spicy bit of Harissa or chili
- 1/2 cup water
- bit of olive oil and papper

Fish Sardine balls;

 - 500 g Sardines
 -  2 cloves garlic
 -  lot ot of parsley and coriander
 -  1 t.s olive oil
 -   Salt / paper/ paprika


  To make the balls, you need to blend those ingredients together until minced, than roll the ball and add them to the tomato sauce cooked few minutes a head.

  In morocco, it s cooked in tajine pan served with bread, some veggies such as carrots, potatoes are added to the sauce.

  You can also have it as pasta sauce with spaguetti or with rize.

 Fish sardines vertus: 

  - full of proteines, lipides, omega 3, vitamiens D end B12, Zinc, Selenium, Iron, Phosphor and Calcium.

                  °preventing for cardiovascular and inflammatory problems.

                  ° due to it's hormone regulation, it helps with depression.
             
                  °good for brain fonctioning and developement, recommanded during bregnancy and                               growth.

    Such an event should be celebrated everyday, but what can we do our moderne society took all our energy and time a way from us that we need a day per year to remind us how much love matters.

  If you are single, take time to love yourself , make time for yourself, sit and breath, think of something to do to disconnect, do whatever makes you feel relaxed and happy, offer yourself a gift or take a swim.
 
   By doing a good deed toward someone, you will receive love energy that will make you love yourself, we are all connected, we are one. Myself i have collected old clothes of mine that i am planning to give a way tomorrow, it can be really anything that will raise your vibration and increase happiness.

   As family, first forget about devices, to begin confiscate everybody 's phone and the rest to make sure everyone is fully present  ;))) than offer everyone the best meal they love at last play funny family game,  if nice weather take everyone to a favourite spot for  a picnic for exemple, try to the max to exclude the stresseful daily routines for tomorrow for you family reunion.

  For couples on the other hands, i have a great ideas a part of the classic idea of exchanging gifts and dining out.

  At first ladies make sure you are well rested and not stressed, because you wanna look glowing and radiant, take long bath to prepare yourself and because you wanna have soft skin for the evening romance, you better scrub that old skin off and wash yourself with rose water, than apply bodylotion.

  Put on candle light all over the house and smooth music. With some petals on the table  and beautiful setting you will be serving a velentine' s menu, it consists on using few afrodisiac ingredients such as Rass el hanout spices, fresh ginger, oysters, black choclat  and so on.

   As a gift write a lettre to your partner to hand while having dinner, saying all the good things about him and why you love him. One more gift once dinner is over is to offer him a sensual dancing show such as belly dancing, don 't  forget to put on the outfit to make it top, be creative.

   Forget about watching a movie, it is something you do every evening, valentine's evening is play and laugh evening, prepare your massage oil with rose or Ylang Ylang essential oil, choose a sensual bedroom colors and light, purple seems to trigger senses, and don' t forget to burn  lavender essential oil for deep relaxation during massage.

   Live the present moment, take time to enjoy each others touching and looking  into the eyes,  become one and feed mother earth with your powerful love energy.

   One thing keeps on coming to my mind is that tomorrow might be the guinness award day to orgasms, hi hi hi, i can t help it but to imagine a global screams for 24 hours.  it' s really nice  global energy we will be receiving, i hope it will help to make all the bad energy around disappear

Roses Festival

                       Festival of Roses in Dades and M'gouna valley

     Kelaat (Citadel) Magouna , is small city situated in south Morocco between Atlas mountains very close to Dades and M'gouna rivers, in Ourzazate region. 

  Such a junction between the 2 rivers, gave the region fertile land to make beautiful pink roses, becoming the main economical activity of the city. 

  A rose festival or Moussem as we call it,  is organised the second week of Mai during 2 days. Where we have got the chance to enjoy nature, local music, local food and of course Damas roses products. 

    Roses are blooming, so it is the time for some hard work. The local cooperative will begin labor as we see bellow:

       


    Hard work has been  also fun as  commnity spirit, so let s get the festivities start and show the results, we have ladies getting dressed and dancing in folkloric way singing about love and   the beauty of nature , man are making ready there music intruments to great the guests and marchants are assembling there products to give the smell of it.


                                        


    the festival is an opportunity to the  girls to meet yong man coming from the surroundings and choose futur bride/ groom. Miss roses of the year is also elected.
